vegan lemon biscuits
ingredients:
(to make about 2 dozen)
* 125g self-raising flour
* 125g semolina
* 125g demerara sugar
* 2 unwaxed lemons
* 125g vegan margarine
put the flour, semolina and sugar together in a bowl and mix well together
finely grate the lemon rinds into the bowl + mix again
cut the margarine, then use your fingers to mix it in well, until the mixture resembles coarse breadcrumbs
squeeze the lemons and add the juice one tablespoon at a time (up to a maximum of 3 tablespoons) until the mixture holds together
roll the dough out on a floured surface to about half a cm thick and cut into buscuit shapes
bake on a greased baking sheet in the middle of a fairly hot oven at about 190 degrees C (375 degrees F/gas mark 5) until golden brown (about 25 - 30 mins)
allow to cool before serving
