vegan rum + chocolate mousse
ingredients:
* 100g vegan plain chocolate, broken up into pieces
* 250ml soya cream (+ a bit more to serve with if you fancy)
* 2 tbs rum (or brandy/amaretto/cointreau/similar)
* a few toasted flaked almonds to decorate (optional)
put the chocolate into a bowl, placed over a pan of gently simmering water - the bottom of the bowl should be above the surface of the water - and leave for a few minutes until the chocolate has melted
add the soya cream + alcohol to the chocolate, then whisk till the mixture has cooled and thickened a little
pour the mousse into 4 serving dishes and chill overnight until it is lightly set
top each serving with a spoonful of soya cream + the toasted almonds if you fancy... other toppings such as grated chocolate work well too...
