vegan choc-orange cake

ingredients:

* 4 oz raw cane sugar

* 4 oz vegan margarine

* 1 tbs syrup

* 1 tsp bicarbonate of soda

* 1/3 pint orange juice

* 8 oz plain flour

* 1 tbs baking powder

* 6 tbs cocoa

* (optional) choc chips/ orange peel/ nuts/ rum

cream the sugar, margarine + syrup together in a bowl

in another bowl or jug, stir the bicarbonate of soda into the orange juice so it fizzes and dissolves - then stir into the first mixture

sift together the flour, baking powder + cocoa

gradually stir the dry ingredients into the moist mixture

add choc chips/ orange peel/ nuts/ rum to taste

when well mixed, spoon into a cake tin or individual fairy cake tins

bake at 350 degrees F /180 degrees C /gas mark 4 for approx 20 - 30 mins...

when ready, cool briefly in the tin before transferring to a wire rack...
